These are Vanilla Funfetti Cupcakes loaded with extra rainbow sprinkles and decorated in colorful vanilla rainbow buttercream frosting! Believe me, you are not going to be able to eat just one, because they are equally delicious as they are visually appealing!
For this delicious DIY Baking Craft, I used Pillsbury Funfetti Gluten Free Cake Mix plus added my own rainbow sprinkles to the batter. After that, I made some homemade buttercream frosting and colored it the rainbow using various decorative piping tips! To me, there is something about coloring frosting that just makes baking, decorating, and eating cupcakes that much more fun!
What I really love about this Pillsbury Funfetti Gluten Free Cake Mix too is that it does not at all taste gluten free, even though it 100% is. I am always looking for something fun and unique that is both gluten free and mimics the real deal both visually and in taste as much as possible. And well, this is a fabulous cake mix that I recommend to you because it checks out on both ends of this matter in terms of taste and appearance! I am a former Pastry Cook, Dessert Prep/Finisher, and have worked and trailed under Executive Pastry Chefs at Michelin Star restaurants before, so presentation is something that I understand when it comes to food (I am also a former Educator and Business Woman as well but we won't get into that because cupcakes are way more fun to talk about!) Needless to say, I recommend this product because I can enjoy it with confidence and am more than happy with the final results both in terms of taste and appearance of the final result. 💖
What also catches my eyes about this baking mix are it's colorful elements (of course!) and is a lot of fun to work with as well because it already comes with rainbow sprinkles added to the ingredients, which is a plus! I ended up adding more sprinkles to my batter like I mentioned previously, because I love a very colorful, crunchy Funfetti Cake/Cupcake. Again, it just makes baking that much more fun and enjoyable!
So, here is what you'll need to make these cupcakes:
💖1 box of Pillsbury Funfetti Gluten Free Cake Mix (plus additional ingredients necessary to make these cupcakes)
🧡Electric Mixer or Handheld mixer with whisk attachments and mixing bowls
💛Standard Cupcake Baking Pan
💚Rainbow Sprinkles (for adding extra, if desired)
💙Cupcake Liners for baking
💜4 Sticks Unsalted Butter (equivalent of 2 cups)
❤️4 Cups Confectioner's Sugar
💖2 tsp. vanilla extract
🧡Red, Orange, Yellow, Green, Blue, Purple, Pink gel food colors that are gluten free
💛7-10 Pastry Piping Bags
💚Piping Tips for each color (for reference, I have listed the different piping tips I used for each color in the Step-by-Step instructions below alongside its corresponding picture)
💙Small mixing bowls for each color of buttercream

STEP 1: Prepare baking mix according to package instructions. Add more sprinkles to the batter, if desired.
STEP 2: Drop the cupcake batter into each baking liner and bake according to instructions. I actually ended up baking mine at 325 for 15-18 minutes and watched the edges around the cupcake for browning. Inserting a toothpick through the center also helps determine doneness.
STEP 3: Allow cupcakes to cool completely before frosting. They will look like this when they are done baking:
Frosting (STEP 4):
Whip the butter in your electric mixer for about 2-5 minutes on medium-high speed until white in color and creamy. Add the powdered sugar and vanilla extract and combine until you have a sweet buttercream frosting.
Divide the frosting into 7 different mixing bowls for each color and prepare your piping bags with their respective piping tips (again, below are the piping tips that I used for each color for every step).
For RED, I used Wilton's 2A piping tip. Place piping tip into pastry piping bag and pipe onto cupcakes. Repeat for the rest of the colors (also, feel free to switch it up and use your favorite piping tips for different colors as well if you'd like!)
RED: Wilton 2A
ORANGE: Piping Tip 336
YELLOW: Wilton 1M
GREEN: Wilton 1B
BLUE: Wilton 1M
PURPLE: Wilton 21
PINK: Exotic Hoya F29 Russian Piping Tip (from a set- it looks like a star with small round dots surrounding a circle in the center)
Continue piping all colors onto each cupcake, alternating with different colors again, swapping out piping tips if desired.
